The Perfect Pizza Pita Recipe - Project Focus

A Cheap and Easy Meal

As university students, it’s a struggle to find creative recipes that don’t have 101 steps and take 2 hours to prepare. This pizza pita recipe gives you a quick, cheap meal that you can alter to your own preferences without the guilt of resorting to a Domino’s.


Ingredients:

  • 4 pita breads

  • 2 bags of mozzarella

  • Grated cheddar (to preference)

  • Your choice of pizza toppings (I usually go for chorizo and mushrooms).

Sauce:

  • 1 tin of chopped tomatoes

  • Salt

  • Black pepper

  • Garlic (fresh or powder)

  • Bay leaves

  • Italian herb seasoning

  • Olive oil


Sauce Instructions:

  1. Heat up a pan to medium heat (a 4 if you have an electric hob) with a small amount of olive oil.

  2. Add the chopped tomatoes, and let them simmer.

  3. Whilst they’re cooking, add 2 bay leaves, a tablespoon of salt and black pepper, 2 tablespoons of the Italian herb seasoning, and a 1 and a half tablespoons of garlic (or one chopped clove if you’re using fresh). Alternatively, wing it with the seasonings.

  4. Mix the sauce as it simmers until it becomes almost paste-like, or until you start to get impatient.


Assembly:

Cut the pita open, and fill it with a combination of the sauce, mozzarella, your choice toppings, and a little bit of cheddar. Then sprinkle some cheddar on top of the pita (there’s no such thing as too much cheese), and stick it in the oven or air fryer at 200C until the cheese crisps up on top, and melts inside.


Enjoy

This meal is one that you can alter to your preferences, whilst remaining creative and easy. If you make too much sauce, it goes perfectly with pasta. Overall, this recipe is perfect for a lazy night where you still want to avoid the financial guilt of ordering another Deliveroo, and leaves you with little to clean up. Enjoy!
